This is brined for days before it is poached and roasted, resulting in a flavourful surprise with a pleasantly chewy bite โ made even better with a smear of the fresh and bright salsa verde. Easily the (unexpected) highlight of our meal here!
If you see this on the ever-changing menu here, don't hesitate. Just order it. Probably the best meat we had all night, this was beyond worth it. A large tongue that brought us on a journey from tip to base, from slightly chewy (in a good way) to melt-in-your-mouth tender. The salsa verde that came with it was the perfect accompaniment. What was most enjoyable about this dish was the fact that they kept it so simple, straightforward and unassuming, and allowed the good cooking of a wonderful piece of meat to shine.
