Uya Japanese Unagi Restaurant aims to offer affordable and authentic Japanese traditional unagi cuisine to the masses in Singapore. Our eels are carefully selected to ensure the ideal quality (colour, plumbness and tenderness) to match our own tare (sauce). The tare used in Uya Japanese Unagi Restaurant is made using a sauce base that has been a family secret for over 4 generations and was specially brought over from Japan to Singapore. Do note that last orders are 60minutes before closing.

Three ways to eat.
1. Enjoy as it is without adding anything.
2. Add some of the condiments (Spring Onion, Wasabi and Nori) to your liking and enjoy.
3. Make Ochazuke (rice with soup) with the condiments and Dashi broth from the small pitcher.

I prefer the third way as the broth was savoury and everything went really.

Their Unagi has a light crisp to it but I do find other restaurants serves better Unagi (softer and meatier) for that price.

I'm a really huge fan of unagi, and there's that few brands that people usually talk about - Man Man, Una Una, Uya and Unagiya Ichinoji. I've finally tried all 4, but definitely open to trying more if any of you have good recommendations!

Hitsumabushi ($35++)
This is prob their signature that most should try when you're there, and there's a few ways to eat it as written in their menu - either as it is without adding anything, or adding some of the condiments (spring onion, wasabi, nori), or make Ochazuke (rice with soup) with their dashi broth.

I quite liked the light crisp that was present on the skin of some unagi pieces, and there was a light smokey flavour as well. Overall the eel was soft and I also liked the sauce used with their eel and rice, which added flavour. Portion was quite decent too.

Tbh can't remember how Man Man taste like to compare, but pricewise both are about the same, and they are prob of similar standards from what I can remember (?). Una Una is the more affordable option, and Unagiya being a much "cleaner" unagi with less bold flavours (which I personally am not a fan of but some might love it that way)

Tried their signature dish. There are 3 different ways to eat the unagi rice. In like the combination of the broth and wasabi with the unagi rice. A little disappointed as the grilled fish could have been a bit more charred and the portion of seaweed could have been a more. A nice place for lunch though. My hubby preferred the one at Village residence Robertson Quay.

The premium moriawase comes with uni and toro. Fresh, good to start for sharing before having their classic unagi main.

Their Signature Hitsumabushi comes in medium / large size, both paired with pickles, condiments, dashi broth and soup for you to enjoy in different ways. I liked how they do their sauce less sweet so it doesnโ€™t mask the unagi, but would have also preferred a stronger char. You will be a fan of this if you like your unagi grilled to a more light crisp with a subtle smokiness.

The eels are imported from Japan twice a week and kept alive in the restaurant within chilled holding rooms, so freshness guaranteed!

Topped with sea urchin, this wagyu rice bowl is only available in limited quantities!

Overall, food quality is pretty good. Both eels and sashimi are fresh. My only gripe is that wished that the rice to ingredients ratio could be better ๐Ÿคญ

Definitely a place to consider getting your unagi cravings fixed!
