Loving the playfulness of this bowl of “indo mie”, right down to the plastic packet of fried crispy shallots, sweet dark sauce and chilli sauce served on the side.

This pimped up version boasts al-dente home-made noodles, a wobbly, perfectly slow-cooked duck egg, fork-tender left-over duck leg confit, and sayur asin(salted vegetables). Most sedap.

Don't be afraid of the dark, the fire will light your way. Before us, a stygian libation of vigorous spirits the likes of Ketal One vodka, Bulleit rye whiskey and homemade fortified wine, tempered with palm sugar syrup and sweet & sour mix. Promethean table-side theatrics involving a blow-torched pine cone released a sweet, woody aroma that complemented as well as enhanced the drinking experience. Garnished with burned cassia bark and molasses cracker.

A distinctly refreshing thirst quencher that begins with a robust base of Bulleit Bourbon and Sailor Jerry Spiced Rum, muddled with tamarillo juice, raw honey and kemangi leaves for a sweet and sour finish. For that final tropical touch, the copper mug is garnished with basil blossom, mint leaves and a glistening tamarillo fruit.

Close my eyes, think of this drink, and I could almost be back in Bali.
