The Carvery, knowns for its premium meats buffet has introduced this unique Pulled Pork Yu Sheng ($38.80++) for 4 to 6 pax available for both dine-in and take away!

This lohei features the premium pulled pork, fried fish skin, caramelised walnuts, granny smith apple strips, red cabbage, orange pearls, and fried pickled ginger, draped with olive oil, white balsamic peach dressing and pok chui crackers!

For those who want something a little more traditional, a Golden Eight Treasures Yusheng with cured trout is also available.

Available for weekend buffets only at $48/$68++ for lunch/dinner. So happy to be back here again for my roast pork. I've been here three times, and I'm still impressed by how they could serve such quality roasts for buffets. That ultra crispy and crackling skin that encased many sinful bursts of pork oil... That's calories worth piling on for. For Christmas, the pork roll is stuffed with sauteฬs diced Chorizo, oregano, onions and Granny Smith apples, and that's what's in that little lump you see on the left there.

This trifle is specially created for Christmas. L Vanilla sponge is layered with hazelnut custard, laced with cognac and triple sec. It also came with salted butterscotch sauce, Kirsch whipped cream, crunchy chocolate feuilletine and almond turron. Save your tummy for this!

This expensive cut of beef is available in the buffet, so imagine having unlimited portions of this prized beef. This meat was also dry-aged *in-house* to intensify the flavour of the beef. Yes, I was surprised to know that Carvery actually has their own dry aging facility.

It's soft, sweet, and juicy - definitely good enough to be served ala carte at a premium in steakhouses, so don't miss this. The Chef only preps it with a touch of salt and pepper before it is slow-roasted in the oven till medium-rare and pink on the inside.

Celebrate this festive period Espaรฑa style, with Park Hotel Alexandra as the good folks from The Carvery presents a lineup of Spanish-inspired Christmas dishes. Famed for their roasts, diners will be in for a treat as they feast upon the Spit-Roasted Chicken with Orange and Rosemary, and the 28-day Dry Aged US Black Angus Prime Rib. The former was impressive for its flavour and texture as it sits in a brine mixture of white peppercorn, bay leaves and thyme for 10-12 hours. Just before it enters the roast, a layer of orange butter and rosemary is stuffed beneath the skin of the bird. To end off the meal, what better way than the Turron Trifle, specially created for Christmas, which has layers of vanilla sponge topped with hazelnut custard that has been spiked with cognac and triple sec. Another layer of salted butterscotch sauce was layered before the addition of Kirsch whipped cream, crunchy chocolate feuilletine and almond nougat.

All you gotta do when you is to hear the sound of them cutting through the crackling and you will be sold! The meat is perfectly cooked and the crackling is amazing to go with the fattiness of the pork. The marinade is definitely interesting especially when it involves coffee powder to give you abit of a caffeine hit.

Iโ€™m a big fan of dry aging beef, and being able to compare the difference against the other cuts on offer just showcases it even more. The beef is grass fed which gives it an even funkier beefy taste that I do enjoy. The cut is perfectly cooked as you can see and works amazingly well with just a touch of the salts or anchovy butter. This cut is not for everyone though, as the funkier flavors might be too much. But do try it out and see if you would appreciate the beautiful art of dry aging!

One of the favourite cuts available at the Carvery and itโ€™s not hard to understand why. Watching them carve the meat off the bone makes it even more appealing, with the beef having this beautiful subtle flavor that went well with the red wine jus or any of the salts they offered. My advice is to ask for a slightly thicker cut, and if possible to get the deckle area (part that wraps around the Ribeye) for maximum enjoyment!

It costs $10 more on weekends but that's also the only way to have this beef cut, because it's only available on weekends.

This is rich in taste, even if you eat it naked without any salt or sauces. It's partly due to dry aging, but also largely due to how the cow was raised. It was grass fed for the majority of its life, then fed with soya and wheat in its last 120 days to create the intramuscular fat.

This porcetta pictured is my favorite meat out of the 6 cuts I tried that evening. I was first hit by the delicate taste and fragrance of coffee in the supple interior of the meat.. then I realised that the skin was very crispy. It was crackling. The secret? It was rubbed with chocolate, coffee powder, paprika and oregano. As for that supple flesh yet crispy skin, that's achieved by first roasting in the oven for 1.5 hours before turning up the heat towards the end to blast the exterior. Now we know :)

The iconic Great Meat Feast at The Carvery (Park Hotel Alexandra) returns with a bang this year, with not just a good selection of beef but also 2 different types of pork! All these in addition to the standard buffet line filled with an amazing selection of sides to go with the meat.

After tasting all the different cuts, I loved the Black Angus (USA) Prime Rib the most. This grain-fed breed is very tender and flavorful, and comes with a good amount of melt-in-your-mouth fats to balance it out. Extra brownie points goes to the charred crust that is achieved by finishing it over charcoal fire. After savouring it on its own, I had mine withred wine sauce and truffle butter (the bomb!) and I would highly recommend having it this manner too!

The Great Meat Feast is available from now till 22 October 2017, daily from 6.30pm to 10pm. It is priced at $78++ for adults from Mon-Thurs and $88++ from Fri-Sun.

The hickory pulled pork was incredibly juicy! ๐Ÿคค๐Ÿคค๐Ÿคค While I thought the rotisserie chicken on their usual buffet spread is already so moist, the honey lemon chicken on the woodfire grill was even better! Definitely must try!๐Ÿ˜‹๐Ÿ‘๐Ÿป

This is the crowd favorite of the evening! Fork tender pulled pork with a refreshing dose of house made hickory bbq sauce. You can taste the full flavour of the pork that has its moisture retained. It's a surprise for me, because I don't usually like pulled pork but I love this. I took a second serving and I became extremely full.. But it was worth it.
