Probably the best pulled pork bun I've tired!

The hickory pulled pork was incredibly juicy! 🀀🀀🀀 While I thought the rotisserie chicken on their usual buffet spread is already so moist, the honey lemon chicken on the woodfire grill was even better! Definitely must try!πŸ˜‹πŸ‘πŸ»

Park Hotel has recently commissioned and paid a 5-digit sum for a new Argentinian Grill, and I was fortunate enough to try it.

The spring chicken spring had an awesome smoky skin with succulent, tender and springy flesh. That's the result of an expert chef knowing exactly how long to grill the chicken for, depending on the strength of the fire and how close the meat it is to the fire.

Argentinian Ribeye

Always happy to be back at #TheCarvery for its premium roasts; this time for its wood-fired weekend grill.

Named Hearth & Heat, the weekend grill showcases a variety of premium meats and dishes roasted over an Argentinian Grill using two types of firewood (Hickory & Mesquite).

Expect perfectly charred wood-fired meats and dishes such as Argentinian Ribeye, Hickory Pulled Pork, Honey Lemon Chicken as well as Cinnamon and Vanilla Roasted Pineapple. My favourite got to be the Hickory Pulled Pork. Served together with fried bun and tangy apple slaw, it's one of the best pulled pork I have had! More of that in another post.

Been raining all day today.

I just need more food. That crispy pork belly, flower crab stew, roasted duck breast with my favourite yam croquettes and that pot of tender braised beef brisket. I could eat them non-stop. All available at the buffet at @parkhotelalexandra The Carvery.

Persimmon Fruit Compote, a refreshing option as it consist of fresh and dried persimmon plus mandarin orange so you can have it on own after buffet.

Or head for The Carvery's signature trifle that incorporates an Asian twist for the upcoming festive. Layers of limoncello soaked sponge cake tiered between yuzu scented whipped cream, custard and yuzu jam before finish off with almonds and mandarins. Light and tangy, it's a sensational dessert that always please.

CNY Buffet is now available from 10 Jan to 11 Feb with its signature premium meats such as this Crispy Pork Belly with Apricot Ginger Sauce!

This is roasted over 2-3 hours and the crackling skin is the bomb!

The Carvery CNY special will launch on 10 January 2017 and available till 11 February 2017. Known for their premium meats, you'll get to feast on three prosperous roasts and delicious items such as
- Crispy pork belly with apricot ginger sauce
- Honey-roasted leg of lamb

Yuzu Trifle

A meal at The Carvery is not complete without having the trifle for dessert. For Chinese New Year, the trifle takes on an Asian twist and transforms into a light and tangy yuzu flavored one! Layers of limoncello soaked sponge cake are tiered between yuzu scented whipped cream, custard and yuzu jam before being topped off with almonds and mandarins. I appreciated the citrusy notes that refreshes my taste buds after such a meaty meal!

Crispy Pork Belly

The limelight of our dinner was this Crispy Pork Belly!!! Each layer delivered their own characteristic β€” crackling skin, tender meat, melt-in-your-mouth fats! Have it with the sweet apricot ginger sauce to cut down on the greasy-ness and you'll be good to have multiple servings of it!
The Chinese New Year Revelry is available from 10 Jan - 11 Feb 2017 at $45/pax for lunch and $55/pax (Sun-Thur) and $62/pax (Fri & Sat) for dinner and slightly pricier on 27, 28 and 29 Jan.

Roast Pork (inclusive in buffet, 45++/pax onwards)

This is amazing.. it rivals the texture of many of the best around, including sio bak at hawkers or porcetta at Italian restaurants.

At the topmost layer, the skin is cackling while being light and airy; At the middle layer you get juicy and melty fatty pork; At the bottom layer you get the leaner cut with, unfortunately, a hint of gaminess but it was not overly salty. Eat all three layers at once and you get the balance of crackle, flesh and fats all at once.

Absolutely love this, but because the meat would toughen and skin would lose its crisp after sitting for too long, you should attack this as soon as you see it. This is taken during an invited tasting. CNY Revelry Buffet available 10 Jan to 11 Feb.

Honey-Roasted Leg of Lamb (inclusive in buffet, 45++/pax onwards)

I especially like the fatty layer of this lamb here, which was juicy with hints of herbs and a stronger garlic flavour. The interior was still pink so the flesh was tender. Overall, what you get is crispy fatty herby skin with a tender meaty interior.
