Market fresh fish cooked to perfection, with crispy skin and milky-white flesh. Served in a pool of spicy Cau Cau sauce redolent with crustacean-y goodness. Half the fun’s picking out the sweet clams peeking out from under the sauce.

Superlatives are insufficient to describe how mind-meltingly exquisite the confit pork belly was. The first bite elicits a gasp of surprise with the crunch of brittle pork crackling, then enjoyment heightens as you discover the subsequent layer of jiggly, melt-in-your-mouth fat before your teeth finally tear into gloriously tender flesh. Lusciously sweet red wine apple puree, thinly sliced green apple, pickled shallots and watercress help cut through the heaviness of it all, but sometimes you just want to go the full hog and roasted sweet potatoes & carrots, fondant potato and an addictively salty chorizo crumble certainly seal the deal.

We stumbled upon a Peruvian restaurant(of all places) on our first evening in Ubud and it our expectations out of the water. The ceviche was outstanding, comprising fresh market fish of the day marinated in lime and served with red onion, coriander, garlic and corn in a rich leche de tigre. Supremely fresh, tart, a little spicy and sweet, this appetizer made us hungry for more.
