This Michelin one-starred stall is opened by a retired Crystal Jade chef who has worked in Crystal Jade for 17 years. It was originally located in Sixth Avenue but it moved to its current location at Bukit Batok East Avenue 5 when the lease was up.

I am not a fan of the signature wontan mee which has a very strong lye taste, but I am totally in love with its Chicken Feet. Made using traditional Cantonese recipe, the chicken feet is steamed till it is fall-off-the bone tender with spicy kick that you don’t find elsewhere.

The former head chef of Crystal Jade, Master Tang Siu Nam, is still hard at work, serving up signature creations even at 80+ years of age.

This has tender, savoury meaty slices of beef brisket, and slippery crunchy pieces of beef tendon, both slow stewed for hours.

The noodles, while having a tinge of alkaline bitterness, have a springy, bouncy texture, and pick up the savoury salty gravy well.

I knew I was in for a treat once I saw the amount of love and expertise that went into handling the noodles and simmering the wantons by the old man mending the store (presumably the owner, who’s known for being the ex-head Chef at Crystal Jade). And I was right! Perfectly cooked wantons with just the right amount of pork to shrimp ratio atop a bed of QQ noodles — flavours are simple, but the execution of all the components are really spot on. Tip: Don’t forget to request for the fried chilli flakes in oil to mix in with your noodles, which they display at the shopfront. So glad that this hawker gem has shifted from sixth avenue to a literal 20-minute walk from my place (233 Bukit Batok East Ave 5)! #burpplesg #burpple

It’s been a number of years since I visited Master Tang’s stall, previously located at Sixth Avenue. It’s wonderful to revisit his stall again, after so long and I’m glad that he is still serving up consistently good Cantonese style noodles. 👍🏻
