Tokyo Banana-inspired dessert by Chef Derek Cheong made with roasted banana ice cream, peanut butter ganache, peanut sponge and a drizzle of coffee caramel. It really does taste like Tokyo Banana!

Refreshing palate cleanser served with apple sorbet, pine, kiwi and shiso oil before we move on to dessert.

The slow-cooked pork jowl glazed with miso is deliciously moist with a good ratio of meat and fats, served with tangy apple purée and cabbage.

Served with beurre blanc sauce made from razor clams and sake lees.

The cod was rich and buttery 🤤 with the creamy sauce and wine adding complexity to this dish.

Plump Hokkaido scallop seared only on one side, accompanied with ragout made with ramson, fava bean, asparagus and kailan.

The creamy and earthy flavours from the greens goes well with the plump and pan-seared scallop.
