This dish reminds me so much of the traditional nyonya dish of Perut Ikan..

Never had prawn crackers with squid ink.. And goes well with the cilantro puree.

Molecular works.. Feels like taking a half boiled egg except the yolk is sour and spicy.. What a creation!

This was served as one of the 3 amuse bouche.. Never had salty meringue before..ever!

Picture this.. Looks definitely like a charcoal..this is a stuffed fish dish that gives u a good taste of Burnt charcoal as the crust.

This is a culinary masterpiece for me.. Melt in the mouth foie gras sandwich made off onion and water "bread"

I grew up eating this pork stew.. This is like a VW beetle in the 21st century... Taste is preserved.. Presentation was trendy..

Certainly does not look like what you would imagine. This street food reincarnation as a terrine gets a full thumbs up for imagination.
