It is a kind of culture that creates enzymes, breaking starch in rice into sugar. Koji is not only used in the production of sake and shochu, it is also widely used in Japanese cooking ingredients like shoyu (soy sauce) and miso (bean paste). Hence, Koji is the ā€œculture and essenceā€ for Japanese wine and dine! A trendy and casual Japanese sushi/sashimi-only joint with a simple menu focusing on quality fresh sea produce, speed and affordability in the day to cater to office crowd. In the evening, omakase (chef decide) menu will be served along with a good selection of sake and shochu for a relaxed dining experience. DĆ©cor will be stylish with counter seats indoors and high tables and benches outdoor. There will be different set of lightings used for lunch and dinner to create the different ambience. Value is emphasized here with undersized Japanese sushi rice topped with oversized slices of fish and shellfish. Nigiri Sushi are served in sets of 5. Sets are priced from Value set of $9++ to Premium set of $23++ which include Chutoro (Bluefin Tuna Belly). Each set comes with a choice of salad or soup. Typically, a customer would order 2 sets of nigiri sushi with a spending of $19++ to $46++ depending on his selection. The superb value Donburi Sets include our signature Chirashi Don marinated with special tangy sauce and our chefā€™s recipe of Salmon Avocado Tartare Don. Served with Miso soup and Salad and priced at $19++ per bowl, they are a must-try. For dinner, in addition to the above, we will be serving 8/10-course omakase set at $98++ and $118++ per person. The course will include appetizers, sashimi, teppan, nabe, sushi and dessert. We are committed to using Japan-produced rice and charcoal-filtered water to achieve the best tasting sushi rice. Guests have a choice of white rice or the healthier mixed grain rice for their sushi and donburi. There will be a small but carefully selected range of artisan sake, shochu and craft beer.

This plate of heavenly wonders keeps making me come back for more~

Met a friend for lunch here two days ago and had to go back to get the same thing for dinner - it's that good! First tried Koji with girlfriends last year and hadn't had time to make it back since. The chevron house outlet is more convinent for sure! Absolutely love the generous portion of fish and how fresh it is! Also props for the different textures in the mixed grain rice and addition of jellyfish

Generous mix of marinated tuna, salmon and swordfish sitting on a bed of mixed grained rice ($18++). Sashimi was impeccably fresh, as always. But the winning factor for koji is the explosive mix of flavours and textures in this small bowl. Besides cubes of sashimi, there's also a dollop of creamy and fatty negitoro, bursts of saltiness from ikura, crunch from the marinated jellyfish, and finally topped off with a sprinkle of tempura flakes. Just perfect.

$30++. I was half prepared to be disappointed by some low grade wagyu but NOPE look at the marbling! As you would expect, it simply melted~ in my mouth šŸ˜‹ This came with a side salad and rice. What an affordable set for the quality of beef!

I like the chirashi don here more than other quick fix chirashi don places such as Teppei and Sushiro. The dressing is tangy, hence more refreshing, while the chunky sashimi slices and fatty negitoro was fresh and wasn't as salty. There's also crispy rice bits and crunchy jellyfish, make this an enjoyable bowl.

I wouldn't recommend adding $9 for the uni. The uni portion was really small (it appeared bigger in the photo illusion here), and it didn't have that sweet creamy taste of uni which I like. Maybe I'm just spoilt by better uni elsewhere.

Canā€™t see the rice in the photo? Thatā€™s how generous Koji is when it comes to the toppings in their Sashimi Bowl ($19). Thick cubes of fatty salmon, smooth tuna, scallop slices, and tender hamachi go into this treasure trove, complete with dollops of gleaming ikura & tobiko. Did we mention that thereā€™s also a side of well-seasoned chuka kurage (jellyfish) too? You can even opt for a hit of fresh uni if youā€™ve got an extra $9 to spare. If heaven is a place on earth, you may just find it hiding right here.
