That ginger sauce that is generously slathered on top deserves the limelight here. The ginger taste wasn't overpowering, there was instead a subtle sweetness in that smooth blend of both young and old ginger. I can imagine myself mixing these into my rice. The cod was also fresh, oily, tender, and firm to the bite. This is as good as it gets.

Famed for their fresh seafood selections, steamed fish lovers wouldn't want to miss out on the Steamed Cod Fish ($32) which has been fragranced with Chinese rice wine and topped with a homemade mixture of old and young grated ginger.

Craving for this Twice-baked Golden Egg Gratin with Caramelized You Tiao [$18]. Main ingredient was supposingly fish intestines but jellyfish were used instead.
Vermicelli, minced olives, Mandarin peels placed below the claypot then eggs mixture were poured evenly. It is then being topped with you tiao.
Thin silvers of Jellyfish gave it a crunch and a sublet taste of mandarin. I'm pretty impressed 😲

These pork chop were amazingly tender, and I understood that the shoulder was used for this. It was pan seared then glazed with this sticky bbq sauce that was sweet and herby, and I felt the dang gui really worked well here to balance the stronger flavour of the bbq sauce.

This is a dish I'll recommend here. The Luffa gourd had a delicate fragrance of the superior stock that was used to braised it, and they were smooth and retains a bite.

I actually love the egg white more, it was so smooth, comforting and addictive. The yellow strands interspersed throughout the egg white are conpoy, which gave it some savouriness.

Always a joy to dine at #JoydenCanton; this time at the second outlet located at Shaw House.

Pan-Seared Pork Chops with Homemade Dang-Gui Barbeque Sauce ($19).
-
Tender slices of pan-seared pork shoulder coated with sweet, sticky, dang-gui (angelica root) BBQ sauce. The infusion of slightly bitter angelica root to the BBQ sauce is an interesting twist which I like.
-
PS: Love the crispy garlic chips!
