Created during Circuit Breaker back in 2020 right from the home kitchen of Chef Renée, @jelebudrylaksa iconic dry laksa dish uses a specific rice noodle for that unbeatable texture. The noodles are first simmered in the thick broth of the laksa, allowing it to soak up the best flavours from the shrimp-heavy laksa broth. Thereafter, the dish is topped with fresh seasonal seafood that is uncommon to see in laksa. Luxe butter-poached lobster, grilled tiger prawns and crispy ebi elevate the already decadent and scrumptious laksa!

I had their Grilled Tiger Prawns Dry Laksa (SGD18), as well as Carrot Cake Omelette (SGD10) to share. Definitely will be back to try more of their small plates, and maybe their Butter Poached Lobster Dry Laksa if I’m feeling rich…

Each small cone is filled with creamy & thick coconut mousse mixed with sweet kaya; came with a big scoop of creamy coconut ice cream; overall coconut taste is quite mild; with crunchy crushed peanuts & crunchy chocolate soil..

Twist to our local braised duck rice; rice is well-cooked to soft & soaked in flavorful & aromatic braised sauce; duck is marinated with braised sauce, well-cooked to lightly crisp skin, tender meat which fell off the bones; came with a sous vide egg & small pieces of beancurd; love the vinegar garlic chilli which balanced out the taste..

Huge portion of thick vermicelli tossed in rich & fragrant laksa sauce; came with fresh cockles, taupok, fish cakes, beansprouts & crispy ebi; opted for grilled tiger prawn which came 3 fresh & well-grilled medium-sized prawn; with a scoop of sambal which complement the dish well but not spicy; good for sharing..

I first tried the dry laksa from Jelebu Dry Laksa at the recent Singapore Food Festival (SFF), and thought that it was really yummy! So I was quite excited to check out their recently opened permanent space at VivoCity.

The one dish that really stood out for us was the Duck Confit with Teochew Braised Risotto, which is an elevated take on traditional duck rice with braised eggs. The duck confit comes together with creamy risotto and sous vide eggs, and the best way to enjoy it is to mix everything with the chilli for a flavour bomb! I personally felt the Jelebu Dry Laksa with Grilled Tiger Prawns ($18), while still pretty yummy, fared better during my initial try at SFF.

Not too bad for the price in a restaurant. Wished the little cubes on top could have been incorporated into the dish instead of if dropping out of the fork/spoon at every bite.

It is more omelette than carrot cake, so it took a bit of getting used to.
