Saw good reviews on Google and the long snaking queues and wanted to try, but unfortunately it fell out of expectations.
The One ($18.90) Tonkotsu ramen was their signature ramen with all the toppings, and while the noodles were fine (though I prefer a thicker cut) the soup was unfortunately lackluster. Although I ordered a medium strength soup, it was way too thin and the flavour was not robust enough. Having had really thick rich ones in Singapore and Japan, this really does not cut it.
The Char Siu is good though; it was tender, meaty and smoky from the torch. Gyoza ($8) was decent too as the skin was slightly crisp with a juicy filling.
Maybe the soup strength is what the locals here are used to?
