Best Local Fusion Dishes In Singapore

Love Singapore food? How about checking out these reinvented local dishes that span across Chinese, Malay, Indian cuisines at Tiger Street Lab, Hambaobao, Kipos and more?

Always searching for local fusion and modern Singaporean dishes to try? Things might get a little weird for your liking, but plus points for creativity!

Tiger Street Lab

For Local Pasta With A View
Street food is in every Singapore foodie's DNA, and that's just what Tiger Street Lab at the top of Jewel Changi wants to recreate. Go for the Laksa Prawn Spaghetti ($20), which as Burppler Audrey & Cady puts it, "you'd like it if you liked laksa." Burppler Adriana Rahman also enjoyed the Lor Bak Capellini ($19) which was "very flavour and had a herbal aftertaste." Not many beers are more Singaporean than Tiger, of course, so grab a bottle or can of Tiger Original, Crystal, or Radler for the ultimate pairing.

For Truly Singapore Burgers
Hambaobao was gone once, and now it's back at Jalan Besar! If you love the earthy and savoury goodness of Buah Keluak, you're in for a treat with their one-of-a-kind Ayam Buah Keluak Burger ($8) that combines the yummy nut and chicken before being topped off with chap chye vegetables. Love Chinese sio bak? Burppler Wei Zhi Chiang also enjoyed their Pork Belly Burger ($8) that sees chunks of crackling fatty pork belly and crunchy Japanese cucumbers sandwiched between well-toasted fluffy buns.

For All Things Bak Kwa
Specialising in signature Bakkwa dishes, this casual eatery tucked away in Senoko South Road dishes up things like Bakkwa Spring Roll ($12.90), Bakkwa Chiffon Cake ($15) and Bakkwa Bao that according to Burppler Alex Loh, was "soft, the Bakkwa filling is flavourful. Beats many char siu bao out there!"

Kipos Gourmet

For Healthy Favourites
Kipos is known for their variety of Build-Your-Own-Bowl options, but did you know they also serve up delish pre-selected bowls? We're talking a Lo-cal Chicken Rice ($8.60) that Burppler Vivian Tabitha liked for its "generous portions of chicken breast sous vide with the familiar chicken rice fragrance and aroma, the bowl boasts a relatively low calorie count of 446 calories." Burppler Shengyang yu also enjoyed the Quinoa Lemak ($8.60), which comes with plenty of roasted almonds, curry turmeric chicken, onsen egg and coconut-simmered organic quinoa.

For Modern Peranakan
With dishes like Dry Laksa ($26) and Sarawak Black Pepper Tiger Prawn Pasta ($26) on their menu, there's plenty of reason for fusion lovers to visit Violet Oon outlets across the island. Burppler Phobe Ting raved about the former, saying "With the laksa reduced to a sauce - it was intensely prawny, spicy and freaking tasty. Burppler Vanessa S describes the latter as "a good rendition of the dish, packed full of spices, it was an explosion of flavours and addictive!"

Labyrinth

For Singaporean Fine Dining
Got some cash to splurge? Look no further than Labyrinth's 'Homage to My Singapore' lunch and dinner tasting menus (from $138). Burppler Julius Lim is a huge fan of the restaurant, saying "course after course, we continued Course after course, we continued to be in awe of the flavours and concepts that were presented to us from Chef Han’s Homage to My Singapore menu". Expect dishes like Ang Moh Chicken Rice with chicken veloute, Bak Chor Mee with Hokkaido scallop, and the restaurant's signature Chilli Crab that comes with chilli crab ice cream!

Harry's

For Fancy Mee Goreng
Harry's isn't the first place you think of when we say local food, but their rendition of Seafood Spaghettini 'Mee Goreng' is a must-try. Think Singapore style fried noodles coupled with tiger prawns, white fish fillet and fried octopus - our tums are rumbling already! In celebration of Singapore's National Day, they're also pouring Tiger Orchid Brew (a flavourful lager infused with orchid and citrus) from tap exclusively till the end of August.

Morsels

For Fusion Singapore Noodles
With noodle set lunches ($28/set) like Pork Jowl Char Siew Wonton Mee with pork kimchi and jalapeno chilli sauce as well as Duck Lor Mee with duck liver ngoh hiang and battered fried gizzard, it's no wonder Morsels at Dempsey is lauded as a favourite destination for mod-Sin cuisine. Burppler Veronica Phua calls the former a "very special wanton mee" and loves that "everything is made from scratch in-house by Chef-owner Petrina."
