I've been here countless times, but Chef Roy could always surprise me with new sushi that excites my taste buds that left me craving for a revisit.

This double chutoro topped with shoyu foam was a pleasure to my palate and my eyes. The sweetness and fragrance from the chutoro oil was given a umami boost from the shoyu foam. The foam structure of the shoyu is not overpowering.. it's puffy, light, and upon consumption spreads itself evenly over the fish.
