It's infused with a strong herbal aroma and Shaoxing wine. Just enough braising gravy flavours the firm rice grains underneath, balancing out the saltiness of the meat. Black fungus is a crunchy refreshing contrast. A dab of chilli sauce hits your tongue with sharp spiciness, and a hint of zest that easily cuts through the strong savoury flavours of my meal.
