The autumn seasonal Sanma had a similar texture to sardines and lent a nice umami to the dish, it definitely was the “star” of the dish with all the rest of the ingredients aimed to bring out its natural flavours. While quite unassuming, it’s one of those “you can’t go wrong” kinda dishes.
