Ssamjang aioli, iskina cebu lechon and chimichurri salsa were encased in a homemade tortilla shell, the chimichurri salsa went well at balancing the fattiness of the meat but it also served to inhibit the lechon skin, which instead of being crisp was rather dull and flat.

The staff actually told us this was the pork belly lechon but i think the orders might have been mixed up.
