This soupy style is the original Ipoh Curry Mee but you don't have to travel 562 kilometres for it. There is a much more accessible spot right here in Singapore at @ron.chef (stall 3 inside Maxwell Road Hawker Centre). A family-run business, they focus on a small selection of Ipoh specialties, including the dish above.
I loved everything about their Ipoh Curry Mee. The very fragrant gravy wasn't the thick-with-coconut-milk sort you associate with most Chinese-style curries. Instead, it's nicely balanced with a chicken broth - making it ideal for rather guilt-free slurping. The fresh mint leaves lifts the flavour profile and the bean sprouts add a welcome crunch to the mixed noodles. What's more, a bowl costs only $4.
