@sonnyspie might look like a bad idea on paper in Singapore’s grossly over saturated pizza market, but there is a method to the madness of head chef & owner @x0ny. Unlike the vast majority of pizza parlours that sell by the whole pie, Sonny’s has gone the classic New York route & sells pizza by the slice.⠀

Trying to choose a slice from Sonny’s selection is a near impossible task. I found myself internally debating the merits of each pizza option for the better part of ten minutes, eventually selecting the GM Pizza at seven bucks a slice. I’ve always been real big on breakfast, so this breakfast themed pizza was right up my alley. The béchamel base was the perfect base for all that molten mozzarella, thick cut bacon, caramelised onions & sausage bits that were topped off by three squirts of hollandaise sauce.⠀

The bacon used in the GM Pizza is tantalisingly thick, and it gives the thin crust pizza a satisfyingly meaty chew along with a beautiful burst of smoky saltiness. The pork sausage, while not notably salty, was heavy on the herbs & spices which carried over well to the rest of the pizza, giving it a delightful aroma & a bit more pizzazz. Ultimately though, the GM ended up veering off deep into sweet territory with the insanely incredible caramelised onions & the hollandaise sauce. Me splashing on a torrent of Sonny’s piquant Hot Honey sauce didn’t help either, even though the sauce was utterly ethereal.⠀

However, the real reason why Chef Son’s pies are this epic is due to that exceptional dough base. No fancy sourdough here, this is just good ol’ 00 flour, yeast and a few other secret ingredients. The dough is remarkably thin and miraculously manages to avoid being soggy in the center, while the outer crust is crisp outside & charmingly chewy within. The feel of the pizza base is very much akin to bread albeit airier. In fact, Sonny’s pizzas are the closest thing I’ve had to the ravishing Roman style pizzas I had in Rome a decade ago despite Chef Son going for New York style thin crust here.⠀

The GM Pizza was truly exquisite. Easy 9/10. Damn Son, these are some perfect pizza pies, and I do want another pizza that.
