Chef Huang’s culinary skills in Xiang, Chuan and Yue cuisines is a perfect fit for the dining concept of Zui Teochew Cuisine which is evident in the new dishes at Zui Yu Xuan which features dishes such as the Double Boiled Pork Broth in Golden Pumpkin Bowl ($12.80), Beef Short Ribs with Asparagus in Red Wine Sauce ($18) and the Pan Fried Shrimp Paste and Pomfret Dumpling. The soup is a classic Chinese comforting pork broth that comes with minced pork, water chestnut and dried conpoy while the beef ribs dish is achieved by deep frying the ribs and then slow braising it in red wine, red yeast rice, garlic and onions till its fall-off-the-bone tender.

A limited time 5-course Signature Set Menu ($50 per pax, minimum 2 to dine) has also been made available till 17 January 2021 and the meal starts off with bite-sized appetizers of pig trotter terrine, ngoh hiang and Puning beancurd before each diner getting the same meat, vegetable and main, with the seafood course based on personal preference. Highlights include the Pan Fried Kurobuta Pork Cutlet, Teochew Steamed Threadfin Tail, Half Boston Lobster Wok Baked with Fermented Bean & Garlic and the piece de resistance, the classic Teochew dish of Wok Fried Kway Teow with diced kai lan and preserved radish.
