Bakchormee (minced pork noodle) is bakchormee right? For me, the most crucial component is the sambal chilli. It needs to have that spicy heat to lift up the noodle which is bland in nature. Added vinegar and a tinge of fish sauce gives it more body. So this bowl had the saltyness and the spicyness. Flavorful bits of minced pork and sliced lean meat. Just a reduction of monosodium glutamate or none is what I would prefer.
