What we like about Kohaku's version of this ubiquitous don is how the morsels are not greasy, but light and crisp with juicy insides. For a meatless alternative, order the Vegetable Tendon ($14) that still offers up a solid tendon experience — think delectable, crunchy veg like baby corn, asparagus and lady fingers.
