I’m a big fan of dry aging beef, and being able to compare the difference against the other cuts on offer just showcases it even more. The beef is grass fed which gives it an even funkier beefy taste that I do enjoy. The cut is perfectly cooked as you can see and works amazingly well with just a touch of the salts or anchovy butter. This cut is not for everyone though, as the funkier flavors might be too much. But do try it out and see if you would appreciate the beautiful art of dry aging!
