Had an introduction to Filipino Food 101 with Muriel the other day, and man, I didn't know what I've been missing out on!

This lechon (a roasted, suckling pig) from Don Lechon was so shiok, we ordered another kilo to munch on! Perfect crispy crackling to go with amazingly tender meat... Dip it into the vinegar sauce to cut through all that meatiness and you're good to go! (ours was great but a colleague who tried it on another day said hers was tougher, so consistency might be an issue)
