Typically sold in small bowls along Thailand's floating markets, the bite-sized portion of noodles and meat — usually pork or beef — owes its rich, robust flavours to the darkened broth. For a more substantial meal, opt for the large Boat Noodles ($6 for pork, $6.80 for beef). There are four levels of spiciness and five types of noodles to choose from — the kuey tiao noodles in less spicy broth is the crowd favourite.
