NEWLY launched today and exclusively for this F1 weekend, this Summer Houjicha cake comes with alternating layers of houjicha soufflé sponge and houjicha mascarpone mousse, adorned with a polished white exterior coat of mandarin orange & kalamansi infused cream frosting. A thin layer of mandarin orange and kalamansi curd can be found within the houjicha sponge layers as well, which comes with a tangy fruity note that I personally feel wasn’t a compatible companion to the roasted tea elements. Nevertheless, I still adore the houjicha mascarpone mousse for its characteristic roasted flavour and fragrance, one thats distinct albeit subtle, coupled with a lingering aroma. Texture of the mousse is smooth, slightly creamy and pairs well with the soft and fluffy houjicha sponge, which also aids in providing some moisture to the mouthfeel. Personally I would prefer for the mandarin orange & kalamansi curd to be omitted here as the contrast in flavours (earthiness vs sourness) didn’t seem to work out well for my palate to appreciate it 😅 .
