Classic vanilla can be a little boring sometimes, so for the Dilmah Tea Inspired Awards All things Delicious crafted a luscious Earl Grey Crème Brûlée ($13.90) with a Fennel Seed Biscotti to add to the menu. Using Dilmah’s Elegant Earl Grey, a medium strength tea gently fused with bergamot flavour, the fabulous custard was balanced and not too sweet. A simple way to add a twist to the crowd-pleasing dessert, the infusion of the black tea base also imparts a delightful layer of complexity to the time-honoured flavour. And of course, there’s really nothing quite like cracking through the crunchy caramel top to reveal the smooth custard underneath. Though a tad overpowering at first, the lingering notes of bergamot with that tinge of citrus grows on you as you get accustomed to the eggy and floral pairing.
