If there was a Thai equivalent of wanton noodles, this is it. The jade noodles presented a nice, springy texture and were moist enough to mix up with their lightly seasoned, spicy sauce. While the double grilled chicken was tasty, with a slightly dark char on the skin, it did feel like the signature minced pork would have had an overall better effect to the bowl. Imagine that sous vide egg spilling its contents to embrace minced pork! On sauces, the lime-fragrant green option fared best for me.
