This porcetta pictured is my favorite meat out of the 6 cuts I tried that evening. I was first hit by the delicate taste and fragrance of coffee in the supple interior of the meat.. then I realised that the skin was very crispy. It was crackling. The secret? It was rubbed with chocolate, coffee powder, paprika and oregano. As for that supple flesh yet crispy skin, that's achieved by first roasting in the oven for 1.5 hours before turning up the heat towards the end to blast the exterior. Now we know :)

I wanted more but my tummy could only take one slice. I wish hotel buffets would allow us to dabao next time 😂 Taken during a tasting.
