This marks a new journey for both chefs, as they are finally reunited almost a full year later as Glen was still in Shanghai when the restaurant opened its doors back then. Avenue 87 is a Modern Asian restaurant with the aim of bringing diners along a culinary experience with dishes that are inspired by the memories, travels, and professional journeys of both chefs.

This new dinner tasting menu is available in five and seven courses ($98 and $142) and continues to deliver nostalgic dishes that are executed creatively based on the chefs’ interpretation of their favourite flavours. The techniques and ingredients used in each course have underwent numerous R&D in order to extract distinctive nuances and flavour profiles that will not only bring a taste of familiarity but at the same time, a nice surprise as well. The seven-course menu starts off with a trio of snacks – Kueh Pie Tee, Prawn Sphere and Camembert, paying homage to our local rojak, hae mee soup and paneer. The Prawn Sphere is a modern interpretation of the prawn noodle soup with an intense prawn broth reduction that is encased in a glazed orb and topped with Avruga caviar and deep-fried Sakura ebi. Pop the entire thing into your mouth for an explosion of flavours. The first course is up next with the Amberjack, a reference to sashimi, that has been marinated with sesame oil and ponzu followed by the Tofu course, a rendition of Glen’s favourite Say Seng Famous Tau Kwa Pau, and this time round, the plant based OmniMeat is used to substitute the protein and paired perfectly with the vegetarian braise reduction.
