Whipped to a light, cottony texture, the mild and milky cheese is baked to a pretty golden-brown finish and cradled with care in a crisp tart base.
Although the staff always throws in a little leaflet listing the different ways one can savour the tart, I like it most when it's still hot from just being taken out of the oven.
