Celebrate this festive period España style, with Park Hotel Alexandra as the good folks from The Carvery presents a lineup of Spanish-inspired Christmas dishes. Famed for their roasts, diners will be in for a treat as they feast upon the Spit-Roasted Chicken with Orange and Rosemary, and the 28-day Dry Aged US Black Angus Prime Rib. The former was impressive for its flavour and texture as it sits in a brine mixture of white peppercorn, bay leaves and thyme for 10-12 hours. Just before it enters the roast, a layer of orange butter and rosemary is stuffed beneath the skin of the bird. To end off the meal, what better way than the Turron Trifle, specially created for Christmas, which has layers of vanilla sponge topped with hazelnut custard that has been spiked with cognac and triple sec. Another layer of salted butterscotch sauce was layered before the addition of Kirsch whipped cream, crunchy chocolate feuilletine and almond nougat.
