The Dashi is not weak, unlike most. There's a substantial body, and a lot of umami. Really good. Noodles on the soft side. Egg was perfect, jammy inside. The char siew is abit dry tho. Smoked duck was utterly amazing, packed full of flavour. It's like the NTUC chilled one(which is alr good) on crack

However, the chili oil is the surprising. Component. I mean, if they dare charge 2bucks for oil, there's gotta be reason right? And it turns out to be very good reason. Not very spicy, but super aromatic from the chili and somehow despite it lacking body itself, combines with the Dashi broth to become a completely different beast with a chili body and you can't rlly taste the Dashi anymore. Fabulous

Known for their signature ๐——๐—ฎ๐—ป-๐——๐—ฎ๐—ป ๐—ก๐—ผ๐—ผ๐—ฑ๐—น๐—ฒ ($๐Ÿญ๐Ÿต.๐Ÿด๐Ÿฌ), the restaurant uses up to 32 different spices for this dish!

The chewy noodles is coated with peanut-based sauce and served with shredded chashu, minced pork, white diced onions, fried onions, pickles, and mizuna. Youโ€™d also receive an onsen egg (served separately). A good variety of colours and textures in the bowl ๐Ÿฅบ

Besides the dashi broth ramen, Enishi also serves, without any doubt, the best dan dan mian in town.

The noodles are served in a unique and bold peanut sauce which is both nutty and savoury. It is then topped with nice soft tender chunks of char siew, minced pork, diced onions, fried onions, pickles and mizuna and an onsen egg on the side.

There are also instructions on how to enjoy this dish. You can choose from three different types of vinegars (spicy, orange or kelp) or to add a dash of the dashi broth which is provided on the side, to change the flavours of the noodles and fit your own palate.

This may sound strange but I felt that the dish goes best with the orange vinegar which is citrusy and tangy. The medley of flavours from the nutty peanut sauce, the fragrant and refreshing orange vinegar and the savoury shredded char siew was simply divine.

A meal at Enishi is indeed on the pricey side but totally worth the price.

Enishi is a small hole-in-the-wall 10 seater restaurant in International Plaza. Its parent restaurant in Kobe, Japan received the Michelin Bib Gourmand for its dashi-based ramen. Unlike tonkotsu (pork bone broth) ramen, dashi ramen uses a kelp based soup stock with different spices and dried goods.

To be honest, it is not hard to see why. The clear dashi broth was surprisingly light yet savoury. The noodles were springy and cooked to perfection. We loved the little bits of sharp, crisp yet subtly sweet diced raw onions and piquant and tangy orange peel toppings. You never know what you will get with each spoonful as you may get a little more crunch, zest or spicy kick.

As for the proteins, the char siew was tender and seared just right to give it a nice smoky charred flavour. You don't usually get smoked duck with ramen (or paired with char siew!) but this was a surprisingly good combination.

At $20 per bowl, this is a relatively pricey bowl of ramen. It is also apparently limited to 100 bowls per day (which sounds gimmicky but may be true considering their limited space and turnover rate). I do however rate this delicious and comforting bowl of ramen and will definitely be back for more!

At the end of your meal at Enishi, you can request for a "mini bowl rice" at the end of your meal (at no charge), but say real one ok the mini portion is actually quite maxi....

Was stuffed by the end of it, but great way to soak up all the sauce. ๐Ÿ˜

The only other option on Enishi's food menu is the Japanese Dashi Noodle, customizable in terms of quantity of ingredients. I opted for the Basic ($18.80+) version, which comes with 1 slice of char siew & 2 slices of duck meat. I wanted to try the baseline offering, so I didn't go for any of the add-ons: Chilli oil topping (add $2+) / rich broth (add $1+).

On hindsight, I should've gone for the Regular ($19.80+) at just a dollar more, which is the Basic with an ajitama (ramen egg). In my haste, I hadn't noticed this. I love egg ๐Ÿฅบ

The ramen noodles are thicker than the usual ones I'm used to, but that's not a bad thing. They were cooked nicely to still retain a big of spring with each bite.

It was a cold, rainy day - & that's why I went for this option with a comforting bowl of soup. The dashi broth is clear & slightly sweet.. While I don't consider it mind-blowing, I do prefer this lightness in flavour compared to the heavier broth types (e.g. tonkotsu or miso).

Unfortunately, the char siu was a bit dry & tough. I didn't enjoy it that much. The duck meat slices fared better, being more tender & I liked how I could peel off the fat/skin easily (don't judge me) (or do).

Overall, this was a decent dish, & great for rainy weather.. But I don't see myself craving for this like I do their Dan Dan Noodles.
