Yum! Mochi donut was served hot and was very pleasantly chewy, itโs not sweet on its own so it complements the other components. The cookie biscuit that was the base of the softserve was good too, crunchy and sweet/buttery. Softserve was p smooth and creamy, cookie butter flavour was distinct and honestly much less sweet than typical speculoos-flavoured desserts. Itโs served with some granola (that had freeze dried raspberry bits) and salted caramel sauce!
Overall a p solid dessert, each component was good and came together nicely, not too sweet as a whole. The mochi donut is v filling so thankfully we shared this between 3! The only thing is that it would have been better if served on a plate - having it in the bowl meant that the donut was soaked in the softserve โsoupโ when it melted.
Brotherbird is very well known for their pastries especially their croissants! To my delight, their cafeโs desserts are beyond imagination. This bowl of goodness is put together using bisoff soft serve, Mochi donut, dried strawberries and wafer. The texture was so balanced with soft and crisp, hot and cold. Goes really well with coffee and tea.

on a lazy Friday afternoon. This mentaiko prawn double baked croissant feels well tailored to the singapore tastebud, with hints of sambal and lotssss of prawns. For $6.50, it's a unique dish that deserves a try. Plus it's quiet in the afternoon for some readings too. Only wished it could be served hotter and more crisp.

Finally got to try brotherbird and I must say I was really impressed with their crossiants! I had the Mentaiko Prawn Crossiant (~$6.50) which was pretty much well stuffed with mentaiko cream which was strong but not too surfeiting! The prawn bits definitely gave it a good bite and a more intense seafood flavour.
The Earl Grey Chocolate (~$6.50) was pretty much bursting with Earl Grey cream, and I loved how it is neither too subtle in flavour nor too rich (or it becomes perfume tasting). The chocolate is on the sweeter side.
Although by the time I ate their crossiants they were not that crispy, they were already very good. I can only imagine how glorious they are if eaten fresh at the cafe. Albeit expensive, they indeed are a treat.
a little pricey but it's worth every cent! absolutely enjoyed the oolong ice cream which had a strong and fragrant tea flavour to it. the great pairing of the cold ice cream with warm donut made the dessert one remember (:
love the collaboration box with chicha! especially loved the black tea croissant which was a lava-croissant with melted centre and the osmanthus oolong had a great balance between the two teas. the dong ding oolong however was a disappointment despite being the one i was most excited for :( do give the above 2 a try if they do bring it back!
Shoestring truffles were pretty good! Fries were thinner than usual, which I enjoyed. Well-seasoned with sea salt, black pepper, and grated cheese. As I like the aroma and taste of my truffle fries to be a bit stronger, I thought this was on the milder side. Nonetheless, a good snack for sharing!

Matcha latte felt more like matcha milk here. There was a good smooth consistency, but it really came off as milk. Matcha flavour was mild, personally would like it to be stronger. Nonetheless, a pretty decent drink, but a bit too pricey for what it is worth.

Was greeted with disappointment on first bite of the Pain Aux Injeolmi. Some people think that Brotherbird is all that โ and I respect that. Iโve ordered croissants from them before and was greeted with innovative and impressive flavours. At their cafรฉ outlet Bali Lane though, the croissants do not seem to be fresh, and the nonchalant service did not make it better. The Pain Aux Injeolmi and the Rocher Croissant were both stale and cold, which took me by surprise because I thought if this was the norm, theyโd offer to heat it up. Because that offer was not on the table, I had expectations that it could be eaten immediately, fresh off the counter โ so I did. Not the best experience, and hopefully the cafe does have the option of heating croissants up. Notwithstanding this, the flavour of this croissant was decent enough. While the injeolmi idea worked out well for a croissant, I did wish that they were more generous with the injeolmi for greater chewiness, as well as more roasted soybean power to elevate the nuttiness.
While I am still reeling from the relatively subpar experience, I am still enticed how their softserve looks. As a sucker for all things aesthetic, I would still return to try the other things on their menu.

Special March edition with a crispy flaky croissant filled with cheesy chicken and tangy tomato
With continual release of innovative flavours, Brother Bird entices us to return for more seasonal line-ups. Their croissants remain flaky, crispy, and airy delights. If nitpicking, all the bakes are heavier-handed on the butter flavour, albeit not too cloying.
๐๐ก๐ข๐๐ค๐๐ง ๐ฅ๐๐ฌ๐๐ ๐ง๐ (4 โญ๏ธ) stood out for the cheesy chicken bolognese filling while ๐ฆ๐๐ง๐ญ๐๐ข๐ค๐จ ๐ฉ๐ซ๐๐ฐ๐ง (3.5 โญ๏ธ) was a close second. The latter had juicy fresh prawns and savory mentaiko filling that was rich without being too creamy, albeit on the saltier side.

๐๐ซ๐ข๐ ๐ข๐ง๐๐ฅ (3.5 โญ๏ธ) was classic although a tad buttery for our palettes. ๐๐จ๐๐ก๐จ๐ซ ๐๐ซ๐จ๐ข๐ฌ๐ฌ๐๐ง๐ญ (3 โญ๏ธ) was generously loaded with creamy and sweet hazelnut filling (tasted similar to nutella). Would suit sweeter tooth but personally would have preferred darker and richer chocolate, and more generous loading of nuts.

everyt came tgt sooooo well & the mochi donut was chewyy. soft serve was just a little too icy.
We also had the churros croissant which had cinnamon sugar on a chocolate croissant. I enjoyed this because it's a combination of all the flavours I like without being too sweet too! ๐
Finally managed to get the injeolmi pastry from @brotherbird_bakehouse and I liked the flavours that were produced from the fragrant injeolmi with the buttery layers of pastry.
Taste super good after heating up.
Can order online and go pick it up to avoid disappointment.
Receiving this box was like a gift from me to me, opening up to the most wonderful smells of a bakery.
The signature croissants, which are always sold out early in the physical stores, have the richness of butter and flaky layers that simply melt in the mouth. It feels almost like a hug especially when warm. My only gripe is the tough outer shell but get through that to yield generous goodness inside.
Within the box, there are two filled twice-baked croissants: the Mentaiko Prawn, savoury with generous chunks of prawn and garnished with ito garashi to look like whiskers; Pistachio, the sweet sister with praline and bobbles of french meringue on top.
The festive spins are the Toffeenut Escargot - swirl shaped to nest the liberal crumbles and Cookie-Butter Cruffin - muffin shaped with hits of sugar and Christmas spices. Both a heart of mochi for a pocket of chewiness, much more palatable than their mochi donut cousins.
